Hari ini saya praktek di kitchen laboratorium, menu praktek hari ini yaitu celebes buffet, dan ini pertama kalinya kami praktek menu buffet.
Pada hari sebelumnya kami sudah menyiapkan bahan-bahan untuk praktek di hari berikutnya.

Buffet is a way of serving food in parties and restaurants by putting food on a long table and the visitors take their own desired menu.
Menu praktek saya hari ini yaitu:
1. Konro bakar
2. Nasi putih
3. Kerupuk,acar,sambal.
Bahan-bahan dan cara membuatnya:
1. Konro bakar
- Ingredients:
8 Beef short ribs
3 liters Beef stock
4 salam leave
50 gr tamarind
50 gr freshly grated coconut
1 pinch. Salt and crushed white pepper
- Spices paste:
50 ml. Coconut or vegetable oil
120 gr. Shallots
40 gr. Garlic
30 gr. Black nut (keluak)
40 gr. Galangal
30 gr. Ginger
2 stalks. Lemongrass
3 salam leaves
1/2 tsp. White peppercorns
1 tsp. Coriander roasted
- Procedure:
1. Boil beef ribs in water together with ginger, galangal, cinnamon, cloves, bay leaf, tamarind water, and salt (Can use your favorite flavor).2. While beef ribs on the stew, stir-fry ingredients smooth to fragrant. Enter into the beef ribs stew, until the ingredients absorb and ribs to mature and soft. Drain the beef ribs, and boil the broth until it is more viscous.
3. Burn the beef ribs over the embers, while smeared with a thick broth spice until fragrant. Lift, sprinkle with fried onions, and serve with a thick condiment of broth and lime juice. Serve while warm.
